This coffee was grown by Mario Jesús whose farm, El Ciprés, is at a
breathtaking 2250 masl. Elevation this high causes the tree maturation
to slow, coffee cherry maturation to slow and fermentation to slow. All
of this results in a recipe for incredible coffee with increased sugar
development and beautiful aromatics.
This region is fairly new to having the support and framework to turnout
coffees like this one. Having Mario's coffee be the first Peruvian
coffee we've had in our lineup, we're excited to bring in more coffee
from Peru in the future!
